Steve Schimoler Jr. grew up around the food business, moving from Long Island to Vermont in 1991 when his father, Steve Schimoler Sr., took a position at Cabot Creamery. After graduating from St. Michael’s College, he joined his father in opening Crop Bistro and Bar in Cleveland, Ohio, where he helped develop the restaurant’s popular cocktail program.
He returned to Vermont in 2009 to work at Pete’s Greens in Craftsbury. “This was a great opportunity to learn more about the food business and to see the real story behind local food and where it comes from,” he says. “Being part of the local food community is a really special thing.” After leaving Pete’s Greens, he went on to become manager at the Blackback Pub in Waterbury, where he become more involved in the beer community. “Blackback Pub is a unique place…truly a “throwback” bar with a true connection to the customers.”
Now, Steve is on board with Crop Bistro and Brewery in Stowe, where he will act as front of the house manager. Crop’s dedication to local, seasonal, sustainable food and its desire to connect with its patrons is the culmination of his work to this point in his young life. “I’m here living the dream.”
